Verjus, house cola, reishi

Served on the rocks.





The Kali"NO"txo is a non alcoholic variation of the Kalimotxo (Calimocho), a drink that has Basque roots and is made up of equal parts red wine and Coca-Cola.


My non alcoholic variation uses Verjus, in French 'vert jus' or 'green juice.' Pressed from unripe grapes the juice is tart and non alcoholic. I use it in place of the red wine that the original recipe calls for.


Instead of Coca-Cola, I made my own house cola (find the recipe in my next post!). The reishi is steeped into the syrup for added immune support and its adaptogenic properties.



Recipe


2 oz Verjus (I used Wölffer Estate)

2 oz cola syrup

1/2 oz fresh squeezed orange juice

Mineral water


In a shaker add Verjus, cola syrup, and orange juice with ice, shake and strain over an ice filled Collins glass. Fill to the top with mineral water, stir to accommodate. Garnish with a citrus wheel.
